Clonakilty White Pudding Croquettes
This is the ultimate croquette. The white pudding adds an amazing flavour to the mash potato.
Ingredients
400g of mash potato
100mls of cream
1tbsp of butter
A pinch of sea salt
Clonakilty White Pudding
2 eggs
200mls of milk
Breadcrumbs
Flour for dusting
Rapeseed oil for frying
Method
Into the mash potato, add the butter, cream and salt, and mix until smooth and soft. Dice the Clonakilty white pudding on a board and the add to the mash potato. Allow the mix to cool before shaping the croquettes. When shaping, take your time and dust them with flour so they don’t go sticky and fall apart. Form cylinders out of the mash. Once you have that done, crack two eggs in a bowl and then whisk in the 200mls of milk.
Dip the croquettes into the egg and milk mixture and then coat them in breadcrumbs. In a deep fat fryer or wok with hot oil, fry until golden and crispy.
Serve with your favourite roast dinner or even on their own as a snack for tea.
