Incredible crispy chicken, sweet brioche bun and Parmesan fries. This is proper comfort food.
Ingredients
300mls of buttermilk
4 cloves of garlic
2 chicken fillets butterflied
3 sprigs of thyme
1 lemon
250g of flour
1tsp of chilli powder
1/2tsp of garlic powder
seasalt
oil for frying

mayonnaise
For the fries
4 maris piper potatoes
olive oil

Method
For the marinade in a bowl smash up the garlic cloves, zest the lemon, throw in the thyme sprigs and add in the buttermilk. Place the butterflied chicken into it and allow to marinade for as long as you can.
While the chicken is marinading crack on with the chips. Cut the potatoes into skinny fries, place onto a lined tray with parchment paper. Drizzle over the oil, rosemary and seasalt. And bake at 190oC for 35mins. Once cooked remove from the oven and then grate over as much Parmesan as you like. (I find it hard to stop)
Once the chicken has marinaded now you can finish it. In another bowl mix the 2 pinches of seasalt, the flour, chilli powder and garlic powder. Take the chicken and dip it into this flour mix. Now place the chicken into a pot of about 1-2cm of oil and fry until crispy on both sides and fully cooked through. Drain onto some kitchen paper and drizzle over some seasalt.
Now build them up. On a plate to one side the Parmesan fries, spoon on some mayo onto the brioche bun and then place that crispy chicken in the centre. Enjoy.
