Vegan Burger

The guys in Clonakilty Food company have made every vegetarian and vegans life so much easier with the new veggie pudding. Their secret spice mixture is the key which is a serious smack of flavour. What I’ve done is taken the pudding a formed it into the greatest cheats vegan burger ever. Clonakilty have done all the hard work of flavouring it so all we have to do is shape it. This is much easier to work with than using a sticky chickpea and flour mixture. A great recipe for everyone on that meat free day.


Ingredients

1x 200g Clonakilty Veggie Pudding

A good handful of organic rocket

1 lemon

4 tbsps of vegan mayonnaise

1tsp of harissa paste

2-3 different coloured beef tomatoes

rapeseed oil

2 dairy free brioche buns

Method

This recipe is so so simple and it’s been made so easy from the guys in Clonakilty. Firstly cut the veggie pudding in half so 100g portions each. Then with the heat of your hands form it into a ball shape. If it’s very cold it will crumble slightly but work with it. Flatten it into a burger patty and place onto a plate and back into the fridge until needed to cook.

Slice your tomatoes and sprinkle with some salt and pepper. For the Mayo mix it with the harissa paste and set aside.

On a non stick frying pan on a medium heat cook the two burgers nicely until golden and crispy. Finish them in the oven at 180oC for a further 5-10mins just to ensure they are full heated through.

Now toast the buns and dress the rocket with a good squeeze of the lemon juice and a pinch of salt.

Now all you need to do is assemble. Mayo on the bottom bun, topped with that veggie pudding Pattie, topped with those seasoned tomatoes, small bit of dressed rockets and finally top it with the other bun. It’s so quick to make this recipe and it’s seriously tasty.
