Ultimate Turkey Burgers

The ultimate turkey burger. A great way of getting flavour into that turkey mince. Don’t be put off by the ingredients list, as most of them are knocking about your kitchen. If you want to keep the carbs down, why not sub in some lettuce cups for the wholemeal buns.

 

Turkey Burgers:

  • 450g minced turkey

  • Zest of 1 lemon

  • 2 shallots finely diced

  • 1 piece of grated ginger (thumb size)

  • 2 cloves of garlic finely diced

  • Pinch of sea salt

  • Bunch of coriander finely chopped (alternatively use parley or thyme)

  • Camelina oil

  • 6 slices of white cheddar (or cheese of your choice)

  • 6 slices of turkey bacon

  • 1/4 of a head of Iceberg lettuce shredded

  • Wholegrain buns

Pickled Onion:

  • 1 red onion finely sliced

  • Pinch of sea salt

  • 4-5 Tbsp white wine vinegar

Burger Sauce:

  • 3 Tbsp mayonnaise

  • 1 Tbsp Worcester sauce

  • 1 tsp tabasco sauce

  • Juice of 1 lemon

Method:

Mix together minced turkey lemon zest, shallots, ginger, garlic, salt and coriander together in a large bowl until combined.
Make into 4 patties Tip: get a bowl of water and wet your hands to stop meat sticking to your hands.Drizzle camellia oil into pan and place burger patties onto the pan. Cook for 8-10 minutes or until cooked through.
Assemble slices of cheese on all the patties Tip: place a metal bowl over the pan to create steam in the pan and to melt the cheese (approx 1 min). Add slices of turkey bacon to the pan and cook for 3 minutes or until cooked through.
To make the pickled onion combine ingredients in a bowl and leave it aside until the burgers are cooked or until soft.
Combine all the burger sauce ingredients and mix through the lettuce. Assemble lettuce with burger sauce onto the bottom bun then add the turkey burger with cheese place the turkey bacon on top then add the pickled onion and the top bun.
