Steak Burrito Recipe
I’ve teamed up with Uncle Bens Ireland on their campaign healthy meals made easy to create some really nice healthy recipes. Here is a delicious steak burrito.
Ingredients:

1 sirloin steak cut in half

1tbsp Sea salt

1tbsp Cracked pepper
-
1 red onion
-
Half a head of iceberg lettuce

4/5 Cherry tomatoes

3 tbsps. of mayonnaise

1 tsp. of mild curry powder

125G of Uncle Bens Wholegrain Bean and Chilli ready to heat rice

50g Vintage cheddar cheese (or any cheese to suit your preference)

Knob of butter
-
Juice of half a lime

2tbsp of olive oil.
Method:

Season the steak with salt and pepper on both sides. On a smoking hot pan, place a glug of oil on the pan and then place on the steak. Cook the steak for 2 mins on both sides on a high heat then, turn the heat down and cook to your liking i.e. (rare, medium, well-done).

While the steak is cooking, slice the red onion, iceberg lettuce and cherry tomatoes. Cut them whatever size you like.

To make the curry mayonnaise, mix the mayo with a tablespoon of curry powder.

Grate the vintage cheddar cheese and set it aside until you’re ready to assemble the burrito.

When the steak is cooked to your liking, place it onto a plate and set aside. Add the Uncle Ben’s Wholegrain Bean and Chilli ready to heat rice to the pan to heat. Add a knob of butter to the rice and juice of a lime. Heat on a medium heat for 3-5mins.

Now you’re ready to assemble the burrito! Place a wholemeal wrap on a sheet of tin foil. Spread the curry mayo first, then place the tomatoes, lettuce, and red onion. Add the sliced steak, grated cheese and spoon over the rice.

Fold over the wrap using the tin foil as a guide and tuck in both sides of the wrap. Slice the burrito in half and enjoy.
