Spaghetti Aglio E Olio

This recipe only takes 6 ingredients. If you are after a quick and easy recipe that tastes sublime, then give this a go. Fresh garlic (aglio), good oil (olio) and nice Parmesan are key.


400g dried spaghetti

pinch of chilli flakes

six cloves of garlic sliced

extra virgin olive oil

parmesan cheese

chopped flat leaf parsley


Season a pot of water and bring to the boil.

Add the spaghetti to the pot and cook to al dente.

While the pasta is cooking add quite a good amount of olive oil to a pan on a medium heat and lightly fry the sliced garlic, until softened with no colour. Add the chilli flakes and fry for another minute.

Now with your thongs bring the pasta from the pot across to the pan with the olive oil, garlic and chilli, purposely taking some water with you to emulsify. Now grate a really nice amount of parmesan to the pan and toss it through. Sprinkle with the parsley and serve right away. Enjoy!
