Homemade Rice Crackers Recipe

Ingredients:

  • 185g of the ready to heat Uncle Bens Long Grain Rice

  • 55ml of water

  • Pinch of sea salt

To serve

  • 2 avocados (peeled and stones removed)

  • 1tbsp of crème fraiche

  • juice of 1 lime

  • 1tsp of sea salt

  • 1tsp of cracked pepper

Method:

  1. Preheat your oven to 200C.

  2. In a food processor, blend the salt, rice, and water until a smooth consistency is achieved.

  3. On nonstick baking tray, place the mixture on the tray creating thin circle cracker shapes. Make sure to leave space between each circular cracker and bake for 15mins.

  4. With a spatula, turn the crackers and bake for a further 7 mins. Remove from the tray and allow to cool before you tuck in.

  5. Serve with this incredible avocado dip. In a food processor, blend the avocado, crème fraiche, lime juice, salt and pepper until really smooth. Serve alongside the rice crackers to dip in.
