Healthy Sweet Sticky Coconut Rice & Mango Ice-Cream
Ingredients:

1 cup of Uncle Ben’s Long Grain Rice soaked in 2 cups of water for 2 hours or overnight

3/4 cup of coconut milk

3 tbsp. of honey

A small pinch of salt

A few slices of mango to garnish
For the mango ice-cream

2 mangos, peeled, chopped and frozen

Zest and juice of ½ lime

2 tbsp. honey

1 tbsp. natural yoghurt (2 if needed, depending on the size of the fruit and the ice-cream consistency)
Method:

For the ice cream, place all the ingredients into a food processor. Blend until it becomes smooth. The ice-cream is now ready to serve or you can freeze it in a casserole dish for 30 minutes until you’re ready to serve.

Drain off the water your rice has been soaking in.

Place the Uncle Ben’s Long Grain Rice into a steamer and steam for 30 minutes. If you don’t have a steamer you can cook the rice on a medium heat with 2 cups of water, lid on for 10 minutes. Combine the coconut milk, honey and salt into a sauce. Bring it to a gentle boil over a medium heat and stir well.

Let it simmer for about 10 minutes.

Remove the rice from the steamer and transfer it to a mixing bowl.

Add in the hot coconut milk mixture to the cooked rice and cover for 20 to 25 minutes before serving. The rice should soak up most of the liquid but should be similar to rice pudding consistency.

Serve with a slice of mango on top with a scoop of the ice cream and enjoy.
