Sole Goujons with Lemon Mayonaise

450g of lemon sole skinned

3tbsps of flour

1 large beaten egg

80g of fine fresh breadcrumbs

2 handfuls of sesame seeds

1 tbsps of mild curry powder

camelina oil for frying

for the mayonaise

zest and juice of half a lemon

6tbsps of mayonaise


In a bowl mix the flour with some seasalt. Put the egg in a separate bowl. Mix the breadcrumbs with the sesame seeds and curry powder in a third bowl or on a plate.

Toss the fish in the seasoned flour mixture, then dip each piece first in the beaten egg and then in the breadcrumbs.

Heat a wok or wide saucepan of camelina oil and cook the fish in it for 3-4mins until nice and crispy and remove and drain on some kitchen paper.

Mix the ingredients for the mayonaise in a bowl and serve with the fish
