Something that was made at least once a week in our house. Adding smoked bacon into it really adds a nice flavour dept. I really hope you bring this classic back as part of your meals during the week. It also goes so well with any steak.
1kg of potatoes peeled and diced
Mix all the ingredients in a saucepan and simmer
on a low heat for 5-6 mins until the bacon and cabbage is fully cooked through.
Serve the colcannon with some Irish butter and sliced spring onion.
