Makes 12-14 pancakes

Ingrdients
110g of plain flour.
A pinch of salt.
2 large eggs.
200ml of milk.
75ml of water.

Filling 
4 pieces of smoked bacon
2tbsps of caster sugar
2 knobs of butter
raspberry coulis or jam
Method
Sieve the flour into a bowl and make a well in the centre. Break the eggs into the centre and whisk to incorporate into the flour. Now add in the rest of your wet ingredients whisking until you have a light batter.

Add some oil into the pan over a hot heat. Add a ladle full of the batter to the hot pan and move from side to side until it evenly covers the surface of the pan.  Reduce the heat and cook for about a minute each side or until the batter begins to take a nice golden colour.  Feel free to try your hand at flipping half way through!


For the filling place the caster sugar onto a pan on a medium heat. Once it starts to dissolve place your 4 slices of smoked bacon on. Allow the sugar to caramelize and then place your knobs of butter in. If the caramel gets too dark don’t be afraid to add more butter.
Place your bacon onto your pancake, spoon over raspberry jam or coulis. Enjoy
