I am delighted to be teaming up with the Clonakilty Food Company to create these incredible recipes using their sausages and pudding. Hope you enjoy!
A true Irish twist on the classic sausage roll. Once you get the hang of the folding, they are very simple to put together.
1 sheet of puff pastry
1 packet of Clonakilty Sausages 454g
1 pack of small Clonakilty Black and White Pudding
Firstly, remove the skins of the sausages and place the meat into a bowl. Dice the black and white pudding up and then add it to the sausage meat. Give it a really good mix with a spoon and set aside until needed.
For the pastry, cut it into quarters, then slice along the edges with a knife towards the centre of the pastry. Fold in the edges towards the centre to create something like a cup. Place in the filling and now fold over the edges towards the centre. Place the sausage rolls onto a tray lined with parchment paper. Crack the egg into a small bowl. Whisk with a fork and then brush over the sausage rolls. Top them with sesame seeds and chia seeds. Bake at 200oC for 15mins.
