Irish Beef Sliders With a Smokey BBQ Sauce
These little bites are so nice and are a winner with
kids. When in season why not slap on some kale chips.
400g of beef mince
2 smoked rashers diced
Half an onion sliced
1 clove of garlic roughly chopped
1 heaped tablespoon of brown sugar
4tbsps of tomato ketchup
1tbsp of smoked paprika
1tbsp of Worcestershire sauce
Some small baps halved
Smoked cheese
Rocket leaves
Firstly Mix up the mince and smoked bacon with a pinch of
salt and cracked black pepper. Make into little meatballs and flatten with the
palm of your hand to form burgers. Heat a frying pan on a high heat with some
oil and cook the burgers on each side for two minutes then turn down the heat
and finish for another 3 minutes on each side.
Meanwhile in a saucepan on a high heat sweat the onion
and garlic until soft and then add in the brown sugar. What you are looking for
is a dark caramel. This usually takes 30 seconds to a minute on a high heat.
Now add in the smoked paprika, ketchup and Worcestershire sauce and heat
through for 30 seconds.

Now assemble the little sliders on a plate with the
bottom bun, the beef burger, a slice of smoked cheese, some rocket salad,
barbeque sauce and then the top bun. Secure it altogether now with a skewer and
