Coconut Chocolate Truffle Recipe

I used to make loads of these as petit fours in a Michelin Starred Restaurant I worked it. So here’s the recipe haha. Enjoy. 
250g of dessicated coconut plus extra for dusting
150g of good quality dark chocolate
200g of butter
300g of condensed milk
Roast off the coconut in a tray in the oven at 180oC for 3-5mins keeping an eye that it doesn’t burn and stirring occasionally. Remove from the oven and allow to cool. In a mix bowl weigh in the condensed milk. Melt the chocoloate and butter together over a ban marie of water or in a bowl in the mircowave with 3×30 second blasts stirring in between. 
Once the choclate and butter is melted stir into the condensed milk with a spatula. Stirr in the roasted coconut until it is well combined and now place either in a piping bag with a medium sized nozzle or a frezzer bag and cut the corner with scissors. 
Line 2 trays with clingfilm and now pipe out the preferred size you would like the truffles to be (I normally do half the size of a ping pong ball). Don’t panic they won’t be a perfect shape at this stage. Once you have the mixture piped out. Place it into the freezer for an hour to chill and harden. 
Once they have harden roll them in your hands until you get a perfect round ball shape. Now you can dust it in the extra coconut you have and serve. Best served with a cup of tea or coffee.

aired each week with 6 episodes in December 2014 and January 2015 on
Sky 191 and Free Sat 400 and is been repeated every week on Mondays and Fridays.
He also has a “Pop Up Cookery School”
where people and students can learn hands on cooking lessons popping
up in local events rooms and halls around the country.
He appears every week on TV3’s Late Lunch Live which now has changed to the Seven O Clock Show where he cooks with a
Celebrity guest and promote what events are coming up in the week. The show is hosted by Lucy Kennedy and Martin King. In May 2015 Adrian took his place in the Guinness Book of Records for the worlds largest potato pancake as part of Coeliac Awareness Week.
Adrian has been voted by in the top 15 rising stars of 2015.
