Crushing with a pestle slowly releases fresh flavours and oils, which is ideal when making delicious pestos and marinades.

Basil Pesto

1 handful toasted pine nuts
2 cloves of garlic
2 handfuls of fresh basil
1 pinch of sea salt
Olive Oil
Parmesan Cheese

Into the pestle and mortar blend together the pine nuts, garlic and basil. Add the sea salt and olive. Then finish with grated Parmesan cheese. Enjoy on pizzas or fold through some spaghetti for a real quick meal.
