For the crisps

¼ small Pumpkin, deseeded and peeled
Ground nut oil

Flour for dusting

Method

Cut pumpkin into very thin slices with a vegetable
peeler.

Pour oil to a depth of 4 inches into a large saucepan and
heat up on a medium heat. Dust the pumpkin slices in flour and fry in batches,
for about 3 minutes or until crisp. Remove with a slotted spoon onto kitchen
paper and sprinkle with salt.
